Blue Eucalyptus leaves are younger leaves with a blue tint before they turn to more of a greenish colour. They are long and slender leaves with a leathery, waxy surface that are covered in oil glands and grow downwards as they are common in extremely hot countries to deliver shade to the trees they grow on. The leaves have an extreme aroma of menthol, citrus and pine with a pungently bitter and warm flavour that finishes with a cooling sensation. Eucalyptus can be toxic when consumed raw so we distil our eucalyptus leaves to extract the minty fresh flavour and aroma for our rum with no risk.
