Cloves are the unopened flower buds of the clove tree, which is an evergreen tree meaning it grows in its environment all year round. Clove trees can live up to 100 years and typically grow in a humid tropical climate bellow 300m where there is not a noticeable dry season. This is extremely important to Malagasy farmers as it means they still have an income during the shortfalls in food production. A sweet and spicy pungent aroma makes cloves perfect for cooking and mixology.
Fun fact: Although we know cloves are used in spicing food and drink it is also widely used for its essential oil that is mixed into perfumes.
