Pineapple rum

Our pineapple rum recipe has been built from the ground up. At its core, cask-aged rum has been fermented with a pineapple yeast string. To complement these tropical notes, we’ve infused it with real pineapple extract and balanced with warming spices. It’s the perfect rum to mix with ginger beer or serve in daiquiri style drinks.

At the base of our Pineapple Rum stands a cask-aged single estate rum from Panama. Here are some of the key features:

In Pesé, Panama, the practice of green cut cane harvesting involves collecting sugarcane without burning the fields, which helps maintain soil health, supports local biodiversity, and reduces carbon emissions. This eco-friendly method also provides more employment opportunities for local communities, contributing to both environmental sustainability and community well-being. Because the sugarcane is harvested without burning, green cut cane rums often feature pronounced grassy and herbal notes, with a fresher, more vibrant taste and subtle earthy undertones.

The distillation process heats the fermented liquid to separate the alcohol, which is then condensed into a purer, higher-proof spirit. This spirit is aged in ex-Bourbon barrels, adding rich flavours and complexity. The distillery controls every step, from growing the sugarcane to aging the rum, ensuring high quality. This dedication results in a rum that truly reflects its origins.

The distillery’s commitment to sustainability includes using leftover sugarcane (bagas) to heat the stills and preparing fields by hand, providing local employment. This careful control of production creates the distinctive, rich flavours of our Panamanian base rum.

At the base of our Pineapple Rum stands a cask aged Panamanian Rum. This rum has been fermented with a pineapple yeast string. It’s what delivers a subtle tropical nuance to the base of our rum.

Natural extracts & Distillates

Pineapple Flavour

When we set out to create our pineapple rum, we used discarded pineapples to extract flavour and make juice extracts for our rum. Through a long development process, we found that turning pineapples into juice and infusing it into our rum enhanced its aroma. Distilling the pineapple skins added a unique tropical hint to the taste. This is why we now use both extracts and distillates to create our unique pineapple flavour.

Re-distilled in potstill

Cloves & Cinnamon

To create a well-rounded taste, we’ve balanced the natural sweetness of pineapple by infusing our rum with a cinnamon distillate and clove tincture. The cloves and cinnamon are re-distilled with a selected single origin rum to extract all their flavours. As each botanical has different characteristics, it’s our master distillers’ job to hit the right cut-off points to ensure all fresh notes are captured in a flavour essence we call an “esprit”. This adds a touch of heat and warmth to the sweet pineapple.
