The XO Colombia rum has been matured for up to 3 years in Colombia and was then partly finished for 2 years in pre-seasoned botanical rum casks in Amsterdam. These tailormade casks have been pre-conditioned with roasted coffee and rum. This final step of the process adds a unique and subtle nuanced coffee finish to this rum.

The XO Colombia rum is aged in Colombia and then finished for 2 years in pre-treated botanical rum casks in Amsterdam, conditioned with coffee and rum.
The sugarcane in our XO Colombia Rum is grown in the fertile valley of Palmira, Colombia. Here, high-quality sugarcane is cultivated without burning the fields, a practice that helps maintain the integrity and quality of the cane. This eco-friendly approach not only supports the local environment but also ensures that the rum produced is of the highest standard.
The process begins with the cultivation of sugarcane on their own plantations. The harvested sugarcane is then processed to extract the juice, which is fermented. During fermentation, yeast is added to the sugarcane juice to convert the sugars into alcohol. This step is crucial as it sets the foundation for the rum’s flavour profile.
After fermentation, the resulting liquid undergoes column still distillation. Distillation involves heating the fermented liquid to separate the alcohol from the water and other components. The alcohol vapours are collected and condensed back into liquid form, resulting in a purer and higher-proof spirit.
In Colombia, the distilled spirit is then aged in American white oak barrels, which imparts additional flavours and complexity to the rum. The entire process from growing the sugarcane to ageing the rum is controlled by the distillery, ensuring a high level of quality and consistency. This dedication to controlling every step of production helps create the distinctive and rich flavours found in Colombian rums.
Spirited Union Distillery, known for its innovative approach to rum, uses pre-seasoned botanical rum casks to create unique finishes to our rums. These botanical rum casks are specially prepared by pre-seasoning them with botanicals & rum before the final liquid is aged in them. For our XO Colombia, coffee was used to prime the casks. This process allows the rum to absorb the complex flavours of the botanicals, resulting in a distinctive and aromatic spirit.
