XO JAMAICA

The XO Jamaica is a rum with a distinctive and vibrant fruity character. Distilled and aged in Jamaica for up to 15 years and partly finished for 6 months in our tailor made pre-seasoned banana rum casks in Amsterdam. This exclusive rum has been double casked in Amsterdam to give the rum a unique and subtle nuanced finish.

Tropical ageing: 6-8-15 years in Ex-Bourbon barrels
Continental ageing: Partly finished for 6 months in Ex-Bourbon barrels (pre-seasoned with dried banana peel tincture)

Appearance: Rich amber with golden highlights.
Aroma: A vibrant blend of tropical fruits like banana and pineapple, complemented by a slight earthy funk and hints of exotic spices.
Palate: Bold and complex, with rich treacle sweetness, layers of tropical fruit and a touch of spice.
Finish: Long and robust, with lingering notes of ripe banana, earthy undertones, and a warm, spicy finish.

In this video, Rogier explores the distinctive, vibrant fruity character of XO Jamaica. Aged for up to 15 years in Jamaica and finished for 6 months in our custom pre-treated rum casks in Amsterdam.

Raw ingredients – Sugar cane juice & Molasses

The distillery primarily uses sugar cane grown on their own estate for rum production. The estate spans over 10,000 acres, and they cultivate various types of sugar cane, carefully selected for their suitability to the local soil and climate. This ensures the highest quality molasses, which is a key ingredient in their rum-making process.

The Harvest

Sustainability and Quality: Spirited Union is committed to sustainability and quality. They work closely with local producers to ensure responsible sourcing and minimal environmental impact. Each batch of rum is carefully monitored and crafted to maintain the highest standards of excellence.

FERMENTATION

The harvested sugarcane is processed to extract the juice, which is then fermented using natural yeasts. This fermentation process converts the sugars into alcohol, creating a rich and flavourful base.

DISTILLATION

The fermented liquid undergoes distillation in traditional pot stills. This method captures the complex and robust flavours characteristic of Jamaican rum.

 

Tropical Aging – in Jamaica

The distilled rum is aged for up to 15 years in ex-bourbon barrels. This aging process allows the rum to develop deep, nuanced flavours and a smooth finish.

Pre-seasoned botanical rum casks

After aging, the rum is transported to Amsterdam, where it is finished in pre-seasoned botanical rum casks for an additional 6 months. These casks have been pre-seasoned with freeze-dried banana pieces and rum, infusing the rum with subtle tropical notes and enhancing its complexity and depth. (see disclaimer regarding GI below)

Disclaimer – GI Jamaica

There have been some significant updates regarding Jamaican rum legislation in 2024. The Jamaica Intellectual Property Office (JIPO) issued a ruling on October 2, 2024, that redefines the Geographical Indication (GI) for Jamaican rum. This new ruling mandates that the entire ageing process of Jamaican rum must occur within Jamaica, prohibiting the ageing of Jamaican rum outside the island and/or the addition of sugar to Jamaican rum.


The final change creates a 24-month period during which rums outside of Jamaica that would otherwise comply with the GI requirements can apply to be certified as such.


The ruling is currently being appealed and has not yet been made final. Spirited Union will keep you updated on the final decision and will ensure that our rum meets the specific quality and labelling standards for Jamaican rum.
